Hot Cross Bun and Bunny Easter Bliss Balls

Happy Easter Everyone!

I am sure everyone is well underway with their Easter and long weekend celebrations because I know I am! 

I remember my childhood easters were filled with devouring hot cross buns, easter eggs, easter bunnies, preparing for the Easter Hat parade, going on Easter Egg hunts, and buying Show bags from the Easter show (normally the candy and chocolate ones, there is a wonder why I was never a fat kid).

This year if you are looking for a new healthy vegan recipe recipe for your children’s Easter Egg hunt or even to bring over to your next Easter Lunch gathering try out these new Vegan Hot Cross Bun and Easter Bunny Bliss Balls. 

I developed this recipe to draw upon two of the well-known symbols of this traditional holiday to bring a little joy to your holiday and to your bellies. But similar to my previous Hot Cross Bun Smoothie recipe, I have consciously prepared this so that you have a healthy and nutritious alternative to the unhealthy fat laden, sweet pastry and chocolates found in the grocery store that can be highly harmful to your families and your health.

This Vegan Hot Cross Bun and Easter Bunny Bliss Ball recipe can be used to signify the hot cross buns that were baked in the past with a symbol to signify good luck, protection, and the intention of ensuring friendship throughout the year, along with the Easter Bunny that over the years had become a prominent symbol of this holiday being known as prolific procreators, and an ancient symbol for fertility and new life (maybe this is where the saying ‘breed like rabbits’ comes into play). In addition, with the leftover white chocolate and dark chocolate you can place these into easter chocolate moulds or easter cookie cut outs to go along with your new Vegan Hot Cross Bun and Easter Bunny Bliss Balls. 

These are all vegan, gluten, dairy, and refined sugar free making them the perfect addition for your Easter celebrations, or any other time of the year because their just that damn delicious!

Vegan Hot Cross Bun and Easter Bunny Bliss Balls

Makes approximately 13 Bliss Balls

Hot Cross Bun/Bunny Bliss Balls

Preparation & Cooking Time

20 minutes prep time/time to make bliss balls

15 minutes cooking time 

10 minutes in the fridge

 Ingredients

  • 3 cups of almond meal
  • 1 cup of dry red lentils
  • 1 1/2 cups of dates
  • 1 cup of dried cranberries
  • 3 tbsp coconut flour
  • 2 tbsp desiccated coconut
  • zest of 1 orange
  • juice of 1 orange
  • 5 tsp ground cinnamon
  • 1 1/2 tsp ground cardamom
  • 1 1/2 tsp ground cloves
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp ground nutmeg
  • 1 /12 tsp vanilla essence
  • pinch of pink Himalayan salt

Equipment:

  • 1 x food processor
  • 2 x mixing spoon
  • 1 x measuring cup
  • 1 x small saucepan
  • 1 x colander
  • 2 x measuring spoons
  • 1 x fine grater
  • 1 x juicer
  • 2 x plate
  • paper towels

Directions

  1. Soak the dates over night or in warm water for 10 minutes
  2. Pour the red lentils in a small saucepan and cover with water. Cook this for 15 minutes until the lentils are soft. After place the cooked lentils in a colander and rinse with cold water. Line a plate with 2 paper towels and before transporting the lentils to the paper towels squeeze out as much water from them as possible. Place the lentils onto the paper towels and cover with more paper towels aiming to absorb as much water from the paper towels as possible.
  3. Transfer the lentils to a food processor
  4. Drain the dates and squeeze out as much water from them as possible. Once you have done this place the dates in the food processor with the lentils
  5. Place the rest of the ingredients above into the food processor with the lentils and the dates. Blitz this up well so that all of the ingredients are well combined
  6. Once well combined and the mixture has been adjusted to taste add in the cranberries and mix this in with your hands
  7. Using a spoon gather a large spoon full of the mixture and roll this into a ball shape and place these onto a plate to make the start of your hot cross buns
  8. For the Easter Bunnies, use a small portion of the mixture to make the head as well and shape this into a bunny face. Also mould a Easter Bunny tail
  9. Place the bases of the Easter Bunnies and hot cross buns into the fridge to firm up while you make the white chocolate and dark chocolate

White Chocolate

Preparation & Cooking Time

3 minutes Prep time

2 minutes cooking time

5 minutes in the fridge

Ingredients

  • 1 cup of melted cacao butter
  • 2 tbsp cashew nut butter
  • 3 tbsp rice malt syrup
  • 1 tsp vanilla essence

Equipment:

  • 1 x bowl
  • 1 x measuring spoon
  • 1 x measuring cup
  • 1 x small blender

Directions

  1. Place the cacao butter in a bowl and melt this in the microwave for 2-3 minutes
  2. Place all the ingredients into a small blender and blend until smooth
  3. Use this mixture to make small crosses on half of the hot cross buns
  4. Place the hot cross buns back into the fridge to allow the white chocolate to set for 5 minutes
  5. With the remaining white chocolate mixture place these into small muffin tins or chocolate moulds and put this in the freezer for 20 minutes to set

Dark Chocolate

Preparation & Cooking Time

3 minutes Prep time

2 minutes cooking time

5 minutes in the fridge

Ingredients

  • 1 cup of melted cacao butter
  • 1 tbsp raw cacao powder
  • 5 tbsp rice malt syrup
  • 2 tsp vanilla essence
  • 2 tsp ground cinnamon
  • sea salt to taste

Equipment:

  • 1 x bowl
  • 1 x measuring spoon
  • 1 x measuring cup

Directions

  1. Place the cacao butter in a bowl and melt this in the microwave for 2-3 minutes
  2. Add in the rice malt syrup and mix this so that it is well combined
  3. Add in the other ingredients and mix these well making sure that it is smooth and there are no lumps
  4. Use this mixture to make small crosses on the other half of the hot cross buns
  5. Use the tip of a knife to make small eyes on the Easter Bunnies. Out of carrots make the Easter Bunnies eyes, nose and feet. Use desiccated coconut on the Easter Bunnies tail to make it look like a cotton tail
  6. Place the hot cross buns and Easter Bunnies back into the fridge to allow the dark chocolate to set for 5 minutes
  7. With the remaining dark chocolate mixture place these into small muffin tins or chocolate moulds and put this in the freezer for 20 minutes to set
  8. Take the Hot Cross Buns and Easter Bunnies out of the fridge to serve up. Bon Apetit!

Tip

  • Feel free to replace the dried cranberries with raisins for a more original hot cross bun mixture
